INSIDE, THE PIÑAS ARE SATURATED BY EXTREMELY HOT WATER & STEAM, RESULTING IN WATER RUN-OFF THAT CONTAINS AGAVE SUGARS.
IF THE AGAVES ARE RAW & UNCOOKED PRIOR TO ENTERING THE DIFFUSER, THE PH OF THIS UNSWEETENED WATER MAY NEED TO BE ADJUSTED BY THE ADDITION OF SULPHURIC ACID BEFOR BEING HEATED FOR A FEW HOURS. THIS MIXTURE IS THEN FERMENTED BEFORE BEING DISTILLED INTO INFERIOR QUALITY TEQUILA OR MEZCAL.
